Polenta Lasanga



With the Holidays upon us before we know, Polenta Lasagna offers your family a Vegan/Vegetarian option prepared by our very own Elizabeth.


  • 5 Cups of Water
  • 1 Cup Polenta
  • 2tsp Basil
  • 8oz Vegan Italian Blend Cheese or Mozzarella or Provalone
  • Ragu Sauce
  • 1 cup Mushrooms
  • 1 cup Broccoli Floretts
  • 1 large Chopped Onion
  • 1 Yellow Squash
  • 2-3 Carrots
  • 1 Cup Roasted Diced Tomatoes


-Pre-Heat Oven at 350 degrees

-Boil & Whisk Water, Polenta, Basil. Once it’s at Creamy Consistency, add Cheese

-Add Mushrooms, Broccoli, Onion, Squash, Tomatoes, & Carrots

-Let the Polenta firm up in baking Dish, Top with Ragu and Cheese, Bake at 350 degrees until cheese melts. Let it sit before serving. Serves 9-12.
